Dolly Parton’s Pan-fried Catfish

Dolly has a whole cook book of recipes titled, Dolly’s Dixie Fixins, but this is her fave.

Ingredients

• 6 1/2 lbs catfish fillets
• lard or shortening, for pan frying
• 1 cup white cornmeal
• salt and black pepper, for seasoning
• lemon wedge

Directions

• Wash the catfish fillets in cold water and pat dry.
• Melt enough lard or shortening in a large cast iron skillet over medium heat to reach 3/4-inch deep.
• While the lard/shortening is melting, pour the cornmeal into a large, shallow plate or dish.
• Season both sides of the catfish fillets (remember to pat them dry, first) with salt and pepper, then dredge them in the cornmeal and shake off any excess.
• When the melted fat is hot but not smoking, carefully slide the fillets into the pan (careful not to splatter, and don’t crowd the pan because you want the fish to fry and not steam). Fry the fish in batches if necessary.
• Fry the fillets about 4 minutes per side, until crisp and golden brown.
• Put paper towels on a platter and transfer the fried fillets to the platter with a slotted spatula or spoon.
• Serve with lemon wedges and your favorite catfish sauce (tartar, cocktail, etc). Make sure to have plenty of napkins, hush puppies, corn on the cob, and coleslaw, too!
• Makes 6 servings.

Kim Kardashian emotionless at LAX

Kim Kardashian donned a brave face for the paparazzi at Los Angeles International Airport this morning after returning from a trip to Australia with her sister Khloe Kardashian Odom and Lamar Odom.

She seemed unresponsive and numb to the cameras swarming around her.

I’ve got to give it to her though, her hair looks flawless!

Lady Gaga signed urinal for sale

What do you buy a person who has everything? Hmmm, I don’t know, how about a urinal signed by the one and only, Lady Gaga?! You can pick one up for only $460,000. Seriously!

This piece of potty is made from Vitreous China and was used by Gaga in a photo shoot for Vogue Homme Japan as nothing more than a prop (we hope) and out of the goodness of her heart Gaga donated it to fashion website SHOWstudio.com who are now selling it for a little over $460,000.

The urinal is mounted on its side and features the inscription, “I’m not a f—ing Duchamp but I love p—ing with you.”

Talk about throwing your money down the toilet, but just in case you do have some spare cash floating around, the site is also offering a brass headpiece worn by Lady Gaga in her Bad Romance video for $23,000.

Both gifts would make great stocking stuffers!

Kristen Stewart in Vogue Italia!

Kristen Stewart opens up in the new issue of Vogue Italia. In the magazine she gives a great interview – and looks beautiful in these pictures!  Here are some bits of the interview:

On her parents working in the industry:

“Both my parents work in film and television, they used to bring me with them at work, where I saw people of every age acting, even children: I immediately understood that I wanted to do it too.”

On why she likes to joke on set:

“There’s a lot of free time, I have to enjoy myself somehow!”

On where she’d like to land if Captain Kirk could take her back in time:

“Around 1948, 1950, so I could listen to the beat generation’s bebop, blues and jazz.”

On her Snow White:

“Yes, but it’s a very original Snow White, a warrior who even wears an armour!”

On the beach scene she shot for SWATH:

“Oh yes, that’s the scene that sees me finally free after my escape from the Evil Queen. I love that dress, it’s gorgeous! Wearing it helped me to get into character. The weight of the wet fabric, for example, helped me to understand the troubles Snow White has to face to escape from her destiny. The hair is also fundamental for this role. These are extensions, my hair is shorter, it reaches my shoulders, more or less. The color isn’t mine either. Since I’ve been acting, I’ve never had my natural haircolor, which is light brown. But it’s okay, it’s fun to see yourself differently when you look in the mirror.”

On what kind of clothes she wear:

“I’d love to wear very feminine clothes, but then, in the everyday life, when I’m in Los Angeles, at home, I’d rather be comfortable. Whereas, when I’m away, like in this case, I pack all kinds of clothes, for the evening as well, because I think that maybe I’ll get a chance to wear them.”

On how long it takes her to pack:

“I’m really organised. I just have to open my wardrobe and choose. But you see, even if I bring lots of clothes with me, it always ends up like this: tank top, jeans and sneakers.”

On doing exercise and staying fit:

“I’m naturally skinny. We’re all like this in my family, so I don’t have to exercise a lot or go on a diet. I do all the exercise I need on set. Right now, for example, to play Snow White I never stop: I run, jump, fight with swords, horseride… I do all kinds of stuff! You see, I’ve even injured myself! But it’s nothing serious.”

On her energy on set:

“It’s true, I don’t lack the enthusiasm. If there’s something to do, I say: ‘Come on, what are we waiting for? Let’s do it!’ Because I’m eager to start. This way of doing things helps me to always keep a high energy. I like going for new projects.”

On her upcoming projects:

“Right now, there’s nothing certain. I’ll take the chance to go back home, to my family, and enjoy some free time. This, right now, it’s my ideal holiday. I travelled around the world for my job, often whitout even realising where I was. I like travelling, but right now, I need to recharge my batteries.”

On what kind of actress she is:

“I’m not one of those actresses that maniacally prepare themselves for a role. On set, I do whatever I need to do, but day after the day. If I have to improvise, I improvise, if I have to learn my lines by heart, I do it. There are certain screenplays which are so beautiful, that they only need to be repeated as they are, without any changes. I live in the moment.”

On why she loves her job:

“Why worrying before a job? I love my job and I want to fully enjoy it. I love it, I’ll never stop saying that. Seen from the outside it may seem like a fairytale, and maybe it is; but there’s a lot of commitment behind it and even a few sacrifices. I, for example, love to sleep, but every morning I have to get up really early to go on set. I win over my laziness, I get up and I happily go to work. The important thing is to keep in mind that acting is like any other job. A job that gives you the chance to keep reinventing yourself, living new emotions and expressing yourself, but that doesn’t really make you different or special. Anyway, I know I’m lucky, because what happens when you’re acting, it’s extraordinary. Sometimes you’re so deeply taken by your character or the story, that you almost risk to lose yourself. It happened to me when I shot “Speak”. I played an introverted girl that decides not to speak to anyone, ever again. Her silence it’s how she defends herself from other people: her schoolmates, her teachers, her family even herself. At the end, it was hard to leave that comfortable silence I had created for myself. With silence you get peace and even your thoughts are more organised, it’s extraordinary and really hard to explain. I lived an interesting experience with “On the Road” as well, where I play Marylou: I explored the freedom of actually living “on the road”, mentally and physically. That’s what I’m talking about, it’s the magic of acting.”

On what kind of wish she’d make, given the opportunity:

“Oh God, don’t ask me about wishes! When I’m in front of a birthday cake, with all the lit candles, and everyone reminds me to make a wish, I just blackout. I think: what do I wish for?, and nothing ever comes to my mind. Then I close my eyes, take a deep breath and the wish comes out. I don’t really know how to explain what happens inside of me, but that’s what happens: breathing is the key to understand what I really care about.”

On whether she has any wish for her job:

“I have everything I could wish for. I receive lots of job offers, job offers that are often interesting. Really, I don’t know what I could wish for… I don’t even have a particular role I’d like to play or a director I’d like to work with. I just let things happen.”

Sorry men, Amber’s into the ladies.

Brett Ratner admits to sleeping with Olivia Munn when she “wasn’t Asian” – calls her bitter.

Wow, Brett Ratner certainly doesn’t hold back. But after reading this article, I can’t say I blame him. Apparently Olivia Munn wrote a book, and in the book she talked about sleeping with a Hollywood director – and pointed out his “undersized manhood”. During an interview to promote his new film ‘Tower Heist’, he admits that he was the director, but she didn’t get all her facts right.

Brett Ratner appeared on G4′s Attack of the Show for just a little over six minutes, but that was plenty of time to cover a wide range of topics. The director took the time to delve into his new film, Tower Heist, the upcoming Oscars (which Ratner is producing), Occupy Wall Street (a “viral marketing” campaign for Tower Heist, according to Show co-host Kevin Pereira), and sex with Olivia Munn. Wait, what?

For those unaware of the gossip, Munn wrote in her memoir, Suck It, Wonder Woman!: The Misadventures of a Hollywood Geek, that she once saw a Hollywood director she had dated holding his “undersized manhood” while eating shrimp. It’s long been rumored that she was referring to Rush Hour director Ratner, and while he did admit on Show Thursday that he was the subject of the passage, he’s claiming that none of it’s true. And making sure to heighten the drama while he’s at it. “I used to date Olivia Munn … when she was Lisa,” said Ratner of Munn, née Lisa Munn. “That was the problem. She wasn’t Asian back then.”

But Ratner didn’t stop there: “She was hanging out on my set of After the Sunset, I banged her a few times … but I forgot her,” he said. “Because she changed her name … I didn’t know it was the same person. So when she came and auditioned for me for a TV show, I forgot her, she got pissed off and she made up all these stories about me eating shrimp and masturbating in my trailer. And my shortcomings. She talked about my shortcomings. I get it. She’s bitter.”

(Munn’s rep has yet to respond to EW’s request for comment regarding Ratner’s words.)

Serious props to Pereira, who changed the mood of the gossip-y conversation by responding, “To be fair, you did ask for a shrimp cocktail in the green room today.” Ratner did, however, have one nice thing to say about Munn… sort of. “I think she’s a lovely nice girl. It’s not the same girl that I met, actually. Olivia and Lisa are two completely different girls.”

I think they both come off as losers in this story. I think she shouldn’t have brought it up in the first place – and he’s got no business talking about it now.

And what’s with this “back when she wasn’t Asian” bit? What in the world is he talking about?
